  • Planting density : 6500 stocks per hectare
  • Soil : limestone-clay on Kimmeridgian marl
  • Vinification :
    • Direct pressing of harvest or saignée on vats of red after 12 to 18 hours in the vat depending on the vintage.
    • Cold settling (5°C)
    • Long fermentation in temperature
    • controlled stainless steel vats (14 to 18°C)
    • No malolactic fermentation
    • Maturing for 4 to 5 months
    • Cold stabilization and clarifying
    • Filtration before bottling.
  • Alcohol content : 12.5 to 13°
  • Residual sugar : < 1g/l
  • Characteristics : A rosé wine with a pale color and grey tones. Fresh and elegant on the palate with a respect for the fruitiness of the pinot noir.
  • Aging : 1 to 3 years.
  • Serving temperature : Serve between 7 to 9°C
  • Serving recommendations : serve with grilled meats and barbecues, cold cuts and salads.
